 Various Chicago media are reporting that Rick Bayless will partner with Crown Imports to create a craft beer scheduled to appear on store shelves next year. I saw this documentary on MSNBC, hosted by primo chef Tom Colicchio who serves as the network’s Food Correspondent, about six weeks ago and the messages and images are still so sharply with me. Calling “Just Eat It” an eye opener is a bit of an understatement, more like a heart and mind opener.

How can we waste so, so, much food??? Here are at least some of the lessons I took away from this passionate work: at the grocery store buy what others won’t, say a misshapen tomato or a bruised pear where the spot can be cut off and the rest is just fine . . . don’t buy “new” food if you have existing food at home that should be used before it goes bad.

A note on one specific item – did you know that for packaged celery hearts, great pieces of the celery stalks are removed and discarded? . . . whatever produce you do buy, use as much of it as possible, “nose to tail” . . . also according to the documentary “sell by” and “best by” dates are generally indications of quality, not safety – it said the only government-mandated expiration date is on baby formula.

Please, see it if you can.

PS – QSR Magazine recently reported, “For the first time ever last year, food waste reduction made it onto the NRA’s “What’s Hot” list”

A personal tale: a few years ago I was hosted at a celeb chef’s fine restaurant but as can happen when the guest is a food writer, lots and lots of food came to the table and lots was left over when it was time to leave. I guess trying not to appear greedy, I initially turned down the offer of a doggie bag. The chef himself came out and asked if it wasn’t good enough to take home {!!!}. I’m sure you can guess that I went home with a doggie bag, several actually.

This was quite wonderful because it meant I could have second {yeah, and third} servings of these delectable dishes. But even better it meant that food did not have to go to waste, and I’ve never again hesitated to take home leftovers.

  Friend of the site Rick Moonen, chef/proprietor of rm seafood and Rx Boiler Room  at Mandalay Bay is a fave of food media, most recently featured in the beautiful Food & Wine magazine. Found so interesting his comment that seafood lovers will cozy up to what’s called “trash fish,” which has to warm his heart because it should mean less over-consumption of endangered fish, an issue that he is passionate about.

 Big news out of NYC where the restaurant lineup is scheduled to become even more spectacular with the planned arrival of a cafe and fine dining restaurant by Anne-Sophie Pic of the legendary Maison Pic in Valence, Drôme, France.

 Coveted double accolades in Chicago for Lee Wolen who was named Chef of the Year while his Boka was named Restaurant of the Year, both Jean Banchet Awards named for the late chef/proprietor of now-closed Le Francais, the Wheeling IL fine dining cottage once called by Bon Appetit magazine The Best Restaurant in America.  Also a site fave, Daniel Boulud has opened another DBGB, this one in the new CityCenterDC which is the blossoming home of top notch dining and shopping options. And it’s already added to Boulud’s trophy case with its recent spot on Restaurant Hospitality’s list of “9 New restaurants We’re Dying to Try.” In other news, the chef’s Maison Boulud at the Ritz-Carlton Montreal is staging a five course dinner paired with wines from Sonoma’s Kistler Vineyards on March 12.

 Primo chef Jean-Georges Vongerichten is celebrating New York Restaurant Week at his Nougatine, Mercer Kitchen, Perry St, and JoJo with a 3-courser at $25 for lunch and $38 for dinner, M-F {Sun, dinner only} now through March 6.

 Las Vegas’ own celeb chef Les Kincaid is hosting a tour of wine country in Oregon May 1-3 with accommodations at the award-winning Allison Inn & Spa, $1499 p/p double, add $399 single. Click link below for more details.

“I’m not a celebrity chef. I just love to cook.” Ha! Don’t believe it.

Not about the loving to cook, because anyone who’s ever taken a seat in one of Andre Rochat’s restaurants will testify to that one. But his comment about not being a celebrity chef . . . ummm, not buying it. Although it could be said chef Rochat had that title before that title existed, bringing his French heritage and culinary talents to Las Vegas to open the town’s first freestanding gourmet restaurant way back in 1980.

He clearly was at the forefront of Las Vegas’ current status as a fine dining destination. Now, 35 years later, though that original place is gone, both of his current restaurants will celebrate this milestone throughout 2015 with ongoing specials, including 35 percent off wines ordered between 5:30p and 6:30p,  guest chef nights, and a complimentary fifth dinner for two for guests who dine four times or more during this year (a value of $200).
