Nov 20.2015 – Would anyone on your gift list enjoy shows from TV’s earliest days?

Hosted & posted by Barbara J Nosek

♦♦♦♦♦♦♦♦♦♦♦♦♦♦♦♦♦♦♦♦♦♦♦♦♦♦♦♦♦♦♦♦♦♦♦♦♦♦

THIS WEEK IN THE GIFT GUIDE

What a treasure trove. Amazon has all kinds of oldies but goodies dating back pretty much to television’s beginnings. I’ve already put together a page that customizes the search to DVDs that are new, in stock, rated 4 stars and above, and that feature shows that aired up to 1960.

If you want to see selections from other decades or with other search criteria click instead on the Full List link. And in fact that Curated Page can also be further customized.

All in all you’ll find individual series such as Topper, The Lone Ranger, Honeymooners, Lassie, Burns & Allen, Jack Benny, Dragnet, Groucho Marx, so many more. There are also collections centered on, e.g., Christmas, cartoons, monsters, and so on, and even some movies such as the 25-movie John Wayne set.

Have you seen . . . the “100-Foot Journey”? It’s sort of like a latter day Romeo & Juliet {squared?}, played out on a culinary battlefield in a charming French village. At one point it takes us to Paris for a while too.100 ff dvd

The Shakespearean vibe is also evident in the clever dialog, deft staging {telegraphed in the title}, and sharply drawn characters, most notably in the portrayal by Helen Mirren. Though guessing you’ll also likely fall in love with “dad.”

Btw, unlike R&J, everybody is still alive and well, and happy too, at the end of the story. Find it now at your DVD store and at the Amazon link below.

Consulting chef for the film was Floyd Cardoz, proprietor of White Street in NYC. His accolades include Top Chef Masters winner and top honors from GQ magazine, which share space in his trophy case with the other coveted awards for the various restaurants he helmed.

In Las Vegas Sept 16? Treat yourself on so many levels with a special wine dinner on that date. First, the menu features “fine wines, artisan cheeses and an assortment of culinary delights.” Second, those delights are coming from superstar Master Chef Gustav Mauler. Third, it’s at his beautiful Spiedini restaurant. Fourth, that restaurant is in the wondrous JW Marriott in Summerlin, home to glorious landscapes and waterscapes. And fifth, how great is this, it all benefits Catholic Charities. Spiedini   Tix

World renowned Alain Ducasse will open the doors to two new places atop the Delano Las Vegas this fall. Rivea with a Mediterranean coast vibe will craft dishes inspired by “the delectable food markets of Provence and Italy,” all accented by a must-see “Wave Wall,” while the adjacent Skyfall Lounge brings nightlife to life with DJ spins, a dance floor, handcrafted cocktails, upscale snacks, and a 180 view of the city from both the seating islands inside and the patio outside.  Delano

Farm to table is a welcome trend that just keeps growing, and has in turn spawned a parallel trend that brings the farm ever closer to the table and that is chef’s’ gardens. ProChef Smart Brief newsletter recently published a story from USA Today Travel about these very gardens that can bloom in a adjacent plot, on the rooftop, or in containers on the patio, all of which may also serve as the setting for al fresco dining. Among the mentions were CCC faves Blaine Wetzel of Willows in on Lummi Island, Michael Mina’s Bourbon Steak in DC, and Tom Colicchio’s Riverpark in NYC and Beachcraft in Miami.  Story

Who ya gonna call??? Ghost Busters??? No, in this case Ghost Hunters, the folks from the Syfy network’s show of the same name who on Sept 2 will be bringing their investigative devices to the Hyde Park campus of the Culinary Institute of America to see if there are “Too Many Apparitions in the Kitchen,” an episode is inspired by the fact that the CIA building was previously home to a Jesuit order and it seems the deceased Father Murphy forgot to leave. At 9p EDT.

To some extent, think we can thank the Millennials for encouraging us to take a closer look at the origins of our food, the back story of what’s on our plates. That movement seems to be driven by equal parts of curiosity and concern.Apple video

And it’s paying off as we see some of the restaurant groups change the way they source their ingredients. But closer to home, lots of us are actively becoming more educated about what we buy, what we serve.

This will help. The Clean Plates site featured this video about apples from the How Grow site and it is quite instructive with some surprises along the way. Others are available too.

OK, so why aren’t we just calling this sauce? Chef Brock explains alongside the recipe in his new cookbook, “Heritage.”

His grandmother, whom he credits with his passion for cooking and the fact that he’s a chef today – called it gravy. That’s why. And you know what,  I can see that because some of the ingredients and prep, the color and texture, and the fact it’s served warm, all do sort of remind you of gravy.

Whatever you call it, it’s going to make you go eyes-closed mmmmmmmm. While there are many foods and dishes this gravy would enhance, Brock serves it over his black walnut pound cake, and that recipe is also in his book.

Makes . . . a lot

1/2 c sugar  1/4 c unsweetened cocoa powder  3 T all-purpose flour  2 1/4 c whole milk  2 T unsalted butter, diced  2 t vanilla extract {see Notes}

Put the sugar, cocoa powder and flour into a med saucepan and whisk to combine, breaking up any lumps. Whisk in the milk. Put the saucepan over med heat and cook the mixture, stirring occasionally with a silicone spatula, until it thickens, 7-10 min.

When the mixture is as thick as pancake batter remove it from the heat and stir in the butter one piece at a time until it is incorporated. Add the vanilla.

Notes . . . Chef Brock specifies Bourbon Barrel Foods Aged Vanilla Extract . . . also says to be sure to use American black walnuts . . . and that the gravy can be cooled to room temp, covered and refrigerated for up to 3 days – warm before serving.
